The Holiday Drink – How to Make It

WHere is a simplified take on a beverage found on our latest cocktail list. It's a batch prepared mix which is packed with essence of the Christmas time, rendering it perfect for your festive gathering. Reserve the remaining citrus syrup you can use for breakfast cocktails, sweets, or to make more rounds of bikinis.

Bikini Recipe

Serves 10 guests

To make the Clementine Syrup (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Cocktail (produces 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Whole cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

Making the Syrup: Combine all the components inside a pan, bring to a simmer, stirring until the sugar dissolves. After that, remove from the heat and leave to cool down entirely. Transfer into an sterilised bottle, cap it and store in the fridge, where it will keep for up to four weeks.

For the Batch Mix: Mix all the spirits and syrup in a big jug, allow it to infuse for an hour, then filter it , ideally through a fine cloth, to ensure it's completely strained.

For serving: Add 85ml of the batch mix into your stirring glass filled with ice, gently stirring carefully for a minute to cool it down. Pour into a frosted cocktail glass or similar, top with some cranberries adding the final touch by giving it a quick spritz of mandarin oil above the glass.
